Vegan Banana Bread Recipe
This recipe makes one 9×5 pan/loaf pan/ 2 dozen mini muffins/ a dozen regular sized muffins

Ingredients
Wet Ingredients
  • 3-4 medium ripe bananas(I tend to use 4 most of the time)
  • 1/4cup oil(I use avocado oil)
  • 1 teaspoon vanilla(I use Simply Organic alcohol-free vanilla)
Dry Ingredients
Instructions
  1. Preheat the oven to 350°F and grease the pan (I use an avocado oil spray)
  2. In a large mixing bowl, use a hand mixer to mash up the bananas. Add the oil and vanilla and continue to mix until blended.
  3. In a separate bowl, mix together the dry ingredients (sugar, flour, baking soda, salt and cinnamon)
  4. Combine the dry ingredients with the wet using your hand mixer until blended.
  5. Fold in the walnuts and/or chocolate chips and mix into the batter with a wooden spoon.
  6. Transfer the batter to your greased pan, and top with some oats if you prefer, or even banana slices!
  7. Bake for 60 mins or until a toothpick inserted in the center comes out clean (for a loaf). If you are making muffins (mini or regular sized), I find 30-40 mins is enough.
