I have been making this vegan banana bread for many years now, and it turns out perfect every. single. time. Except for the (many) occasions where I’ve forgotten to put the sugar in – whoops! But that’s okay, because I received many helpful suggestions from all of you on how to sweeten it up if it ever does happen again – you can top it off with maple syrup, vegan whipping cream, fruit/berries…anything sweet really! The recipe was given to me by a good friend, and it is so simple and easy – I think it gave me the confidence I needed, because I was never much of a baker!
So, I’m gonna get right down to the nitty gritty – the recipe. It is delicious, moist, and pretty much PERFECT, especially if you pair it with a nice glass of almond milk – YUM! I find that it is great for any season and any occasion, we make it all year around in our house.

- 3-4 medium ripe bananas (I tend to use 4 most of the time)
- 1/4 cup oil (I use avocado oil)
- 1 teaspoon vanilla (I use Simply Organic alcohol-free vanilla)
- 3/4 cup sugar (I mostly use 1/2 cup because I find that the natural sweetness of the banana is enough)
- 2 cups flour (I usually do 1 cup of spelt flour and 1 cup of all-purpose)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon or nutmeg
- 1/2 cup walnuts or pecans or chocolate chips

- Preheat the oven to 350°F and grease the pan (I use an avocado oil spray)
- In a large mixing bowl, use a hand mixer to mash up the bananas. Add the oil and vanilla and continue to mix until blended.
- In a separate bowl, mix together the dry ingredients (sugar, flour, baking soda, salt and cinnamon)
- Combine the dry ingredients with the wet using your hand mixer until blended.
- Fold in the walnuts and/or chocolate chips and mix into the batter with a wooden spoon.
- Transfer the batter to your greased pan, and top with some oats if you prefer, or even banana slices!
- Bake for 60 mins or until a toothpick inserted in the center comes out clean (for a loaf). If you are making muffins (mini or regular sized), I find 30-40 mins is enough.
